I had a couple of emails asking for my cream puff recipe…

I’m posting the recipe for cream puffs, or eclairs, from one of my mother’s best cookbooks, a tattered and stained copy of “The Art of Fine Baking” by Paula Peck. The chocolate glaze to top it off I’ll type in after the scans.
Okay, you won’t find a clearer, better, recipe than that.
Note, if you’re in a rush you can always fill the puffs with your favorite ice cream.
Here’s the chocolate ganache, or glaze:
It’s cream brought to the boiling point, and finely grated or chopped bittersweet chocolate. You’ll probably want to use about 3/4 of a cup of cream to 3/4 of a pound of grated chocolate. Place the grated chocolate in a bowl, pour the boiling cream on top and stir to blend and melt. It’s easier if you let the cream rest on top of the chocolate for a minute before you stir it up. That’s it! Chill and then spread it on top of your cream puffs. And, then brew up a pot of coffee and invite me over.
All of my kitchen gadgets and equipment are in that damn storage unit. I’d love to try this recipe, it sounds yummy and easy enough. Maybe I’ll just have to go buy replacement items at Williams Sonoma. 🙂 I have no intention of revisiting that unit, hauling the boxes back and unpacking them. I’m currently living like an Amish woman – someone please kill me.
Now listen, doll – I know nothing of your legal situation – but you march right out there and get thee some retail therapy. Buy everything you want at Williams and Sonoma. If there was a way to pull a Satsuki Mitchell and rack up a million dollar debt on a certain person’s credit card I would highly advise it. I know my pop used to always tell me that the best revenge is living well, but this morning I’m feeling Sicilian. Yes, yes, the million dollars might be a little intemperate, but at least get yourself the means to make some cream puffs and bottle of the most decadent perfume you can find.
Ahh yes, perfume. I was just at the Chanel counter yesterday and did some damage.
I also recently purchased some very luxurious bed linens and a delicious duvet. It does feel good, you’re right. I’m actually thinking of getting on a plane and heading south to West Palm Beach. Why shouldn’t I? It’s miserable here, and while I have this reprieve from house selling, I might as well escape to sunny Florida, right?
